Honey, Pepper and Thyme Gin Cocktail

Just trust me. You may have read pepper in the title and want to make a run for it. Please don’t. Stay right here. In my opinion black pepper is far too often overlooked as salt’s sidekick.

The underdog on the seasoning squad. Well, it’s time for this spicy staple to have its Cinderella moment. Using it in this cocktail, adds some serious punch to an otherwise mediocre drink. Not to mention, the crack of pepper mill creates a beautiful floating garnish. Cheers!

Ingredients

Honey, Pepper and Thyme Gin Cocktail

2 tablespoons honey

2 tablespoons fresh thyme leaves, plus more sprigs for garnish

1/2 teaspoon ground black pepper

Juice of 1 lemon

4 ounces gin

Cooking Instructions

Combine the honey, thyme, pepper and lemon juice in a cocktail shaker. Use a muddler or the back of a large wooden spoon to muddle the thyme leaves, breaking them up as much as possible. Add the gin and a handful of ice and shake until very cold. Strain into 2 glasses filled with ice and garnish with more thyme, if desired. 

Yield: 2 drinks
